Crayfish

Description

This freshwater crustacean looks like a small Lobster – averaging 10cm long and weighing roughly 50 grams.

The tail meat is succulent with a Prawn-like texture and a lovely sweet taste.

Most popular way to serve is in a salad as a starter. Peeled Crayfish tails in brine have become very popular over the last few years.

Crayfish can be sourced from many different lakes and rivers all over the World Crayfish are characterized by a joined head and thorax, or midsection, and a segmented body, which is sandy yellow, green, red, or dark brown in colour. The head has a sharp snout, and the compound eyes are on movable stalks. The exoskeleton, or body covering, is thin but tough.
