Lobster

Lobsters are a family (Nephropidae, sometimes also Homeridae) of large marine crustaceans. Lobsters have long bodies with muscular tails, and live in crevices or burrows on the sea floor. Three of their five pairs of legs have claws, including the first pair, which are usually much larger than the others.

Native Lobsters are from coastal waters around the EU and are often considered the best in the world. However, in the winter months when the price is too high Canadian and American Lobsters provide a readily available all year round alternative at a much more affordable price.

Lobsters can be purchased cooked, but will be at its freshest and tastiest, if you buy them alive and cook them yourself.

Since lobsters are very expensive, the best way to enjoy the sweet flesh is to cook them simply, either halved and grilled or baked, boiled or steamed, and served with a butter sauce, lemon juice or mayonnaise. If you’re feeling adventurous, try using lobster in a mousse or risotto, or cook the classic Lobster Thermidor – grilled lobster halves served with a mustard cheese sauce.
